Vegan Elephants

The kids at school keep asking me how I get my protein. My Dad says to tell them, the same way Elephants do! Elephants are Vegan!  LOL!

Dark Vegan

Kids are starting to learn about being Vegan even more!  This is "Dark Vegan" from the cartoon Johnny Test".  Dark Vegan loves toast, in fact, he's obsessed with it.  His light stick is shaped like a carrot.  He tried to destroy the meat planet in one cartoon.  It's so funny because of course he shouldn't be dark since he's totally healthy.  It cracks my mom up!

Getting My Nutrients


Ok, you know how I was talking about having a juice everyday? It's so important to make sure your getting enough nutrition when you're eating plants. This juice was so good! I put an orange, a tangerine, two apples, a whole thing of kale, four celery sticks, a half of a bell pepper, lots of carrots, a half cucumber, and a couple handful of lettuce. It was DELICIOUS!

Cream Sauce


Check out this Gnocchi! Gnocchi is one of my favorite things to eat. I used to get one that was all processed with a processed alfredo sauce. It's that creamy texture with the little dumplings that is sooo good! WELL GUESS WHAT?! I made my first Vegan Cream Sauce tonight! I also made the vinaigrette you see in the picture that's all drizzled on top, THANK YOU VERY MUCH! Here's the recipe:


Thyme Vinaigrette:

2 tbs Fresh Thyme, leaves only
1-2 Pinches of Salt, to taste
4 tbs Olive Oil
1 tsp Vinegar (I used my Dad's super yummy home made Red Wine Vinegar)

Strip the thyme leaves off their stems into a mortar, (I love using these things!). Add a pinch or two of salt and grind with the pestle until a rough paste is formed. Add oil and vinegar and mix again. Taste and see if there is enough salt and vinegar, and add more if needed. Set aside.


Lemon Cashew Cream:

1 Cup Water, split
1-1/4 Cups Raw Cashews (soak beforehand in hot water to soften)
Zest of 1 Lemon
1/2 to 1 tsp Lemon Juice, to taste

Place 1/2 of the water in blender with other ingredients. Blend till smooth adding remaining water slowly till thick and smooth. Adjust seasoning as needed.


That's it! It was so easy. I told my Mom I can't believe people would eat all that dairy when you could have something so easy, way better for your body, and SUPER GOOD!
